Today I am going to share a very simple and very easy to make an remember recipe of gravy, this recipe has been in our family for like ever and for ages, and I love the small and the taste of this particular gravy, it is a very subtle and very simple recipe and anyone can make it, even if you are perfectly beginner in the cooking.
Here is what you need to make this gravy to serve with your turkey and mashed potatoes and you can actually keep it and then use it as a base of curry based cuisines.
You need one large onion and peel it and chip it in small pieces.
Two peeled and chopped carrots,
Two ribs celery washed and chopped.
Two teaspoons vegetable oil
Two large turkey wings
Two tablespoons cold water
Liter chilled water.
Three tablespoons butter
Half cup of all-purpose flour
Salt and black pepper
And a pinch of cayenne pepper
Now we will start the cooking and we will preheat oven to 400 degrees F, and now we will mix onion, carrots, celery, and vegetable oil in a large roasting pan and mix them well and then put the turkey wings on top of vegetables and put the roasting pan in the preheated oven and cook until the turkey wings are browned and vegetables are caramelized and softened, I think it will take some 45 to 60 minutes and then you will be able to take it off.
Now transfer turkey wings and vegetables to a large stockpot and then we will put the roasting pan over a stove and add 2 tablespoons cold water into the pan let it boil for a worm up till bubbling and then we will clean the browned bits from it and transfer the mixture to the stockpot and then we will add approximately 10 cups of cold water and then we will add thyme, and garlic in it and let it simmer for a while and we will let it get boiling on the low heat for about 3 hours, we will keep skimming the turkey fat off the mix throughout the time and then we will strain the turkey stock and reserve 6 cups of stock and we will discard all the solids from the mixtures.
Now we will put the pan on the heat and add the butter and reserved turkey fat in it and when they start sizzling, we will add flour and cook it for a while and then we will pour in turkey stock, and at that moment you have to keep the whisker in your hand and whisk continuously on high heat for 5 minutes and then we season the gravy with salt, black pepper, and cayenne pepper to taste and we are done, You just need to garnish it with some greens and you are ready to sever the best gravy ever with your thanksgiving diner.
