Today I am sharing a very simple recipe of an upside down cake and you can use any fruit at all with that recipe, one of my all time favorite teachers gave me and he was French and I can tell you ingredients use to talk to him, I never saw him adding anything less or more and the shocking thing, when he use to cook at home for us, he never used any kind of measuring cups of tools, his hands tell him how much is enough and I need to stop right now, cause I can talk about him all day long, he is the best.
You need 3 tablespoons unsalted butter, 4 tablespoon brown sugar, 3 cups of any fruits you like and nuts or whatever you like to add on toping.
For the cake:- you need 1 ½, stick unsalted butters softened, but not melted.
Three tablespoon sugar
2 cups all-purpose flour
1 tablespoon baking powder
A pinch of salt
2 large eggs
First of all we will prepare the fruit and preheat the oven and I am outing it on 350°F and now we will wash and cut the fruit and dry them, w need dice chunks of fruits and if you are using berries then you can left them whole, but take the smaller stone out of it.
You need to make brown sugar glaze and for that place baking pan on a burner over low heat and add the butter and then add brown sugar and stir it gently, and when the brown sugar is completely melted, turn the fire off, but keep the pan on it.
Now we need to make the cake batter and for that take a stand mixer and add cream the butter and sugar until fluffy and then add flour, baking powder and salt and then add eggs one at a time and then vanilla and keep blending till the mixture look fluffy.
Now you need to take your pan and fix the fruit to the pan, you need to arrange the fruit beautiful, because that will be the look you would give to your cake, add so many fruits, but in an organized way, and you need to keep one thing in mind that fruit will shrink a little when cooked.
Now pour the cake batter, you can mix some fruit with the cake batter too if you like and then let your butter sit down a bit and then Bake.
You need to put the pan in the oven and ten slow down the heat and bake for 30 to 40 minutes, or until the top of the cake is golden brown and then check the cake with thin knife or toothpick.
Your cake is done, transfer the cake to plate and let the cake settle for a minute and you will see that fruits will release the juices and it would add the magic in your dish and then serve with barely sweetened whipped cream.
